Questions to ask

Be cautious with anyone who wants full payment before starting, won't give a business name you can look up or suggests skipping the permit. A qualified plumber will be comfortable explaining the permit and inspection.
Keep the paperwork
Keep the invoice, permit and warranty papers with your house records. Note the brand and model of anything installed. If a problem appears later, those details make the next repair much quicker.
Inspections
Permitted work is inspected before it's covered up or put into service. Ask when the inspection will happen and whether you need to be home. A signed-off permit is useful proof of the work when you sell.
